Snowy Saturday


Hello friends,

I haven't posted much here this week and I can't really say that it's because I've been busy as much as it's because I've been enjoying my downtime. I've been spending time with friends, crocheting, trying to catch up on my e-mail, and just chilling before the next round of classes begin.

We got a pretty good snowstorm last night so it appears some of today's exercise will be shoveling. I think I"m going to sit tight today, watch a movie or two and crochet! I'll put a pot of soup on and take it easy today.

Southwestern Cauliflower and Ham Soup

"Serve hot with a slice of cheese bread. Enjoy!"

PREP TIME 16 Min COOK TIME 14 Min READY IN 30 Min

INGREDIENTS
1 tablespoon olive oil
1/2 cup chopped onion
2 (14.5 ounce) cans chicken broth
3 1/2 cups cauliflower florets
1 cup chopped cooked ham
1 1/2 cups shredded Pepper Jack cheese
1/4 cup potato flakes
5 tablespoons chopped fresh cilantro ( I omit because I don't care for cilantro)

DIRECTIONS
In a large pot over medium heat, cook onion in oil until just beginning
to brown. Pour in broth and bring to a boil. Stir in cauliflower, bring
to a boil again and cook until cauliflower is tender, 2 to 5 minutes.
Remove half of cauliflower mixture and puree in a blender or food
processor until smooth. Return to pot with ham and cheese and cook until
cheese is melted. Stir in potato flakes and heat through. Serve topped
with cilantro.

  1. Soup recipe sounds really good.
    I imagine having some downtime was something you needed.

    You have snow, and here today it was in the eighties. Such a difference in our weather. I think I would love living where it snowed. How high do the temperatures get in the summer where you are.

    I didn't do much of anything today. We went to dinner with daughter and son inlaw tonight. It was fun as always.

    Enjoy your self and relax before your classes start again.

  2. I finished David's scarf, and am working on a wheelchair wrap (shawl) for the ministry. I should finish that tomorrow for sure. Then I want to spend some time putting some rows on the arrow stitch afghan for my mentor. I have some knitting that I want to learn as well. So many projects, not enough time lol!!!

    I'll post a pic of David's scarf on the blog in the morning.
